Vegetable casserole

This Cheesy Vegetable Casserole is EPIC! It’s layered with broccoli, cauliflower, peppers and topped with cheese. And served with the special sauce.  Its everyone’s favorite dinner recipe. 

Storage

  • Store in an airtight container and refrigerate for up to 3 days or freeze for up to 3 months. Leftovers do freeze well.

Ingredients:-

  • 1 broccoli.
  • 2 tablespoons milk.
  • 2 tablespoons milk
  • 500 grams of cauliflower.
  • 1 onion.
  • 1 carrot.
  • 2 clove of garlic.
  • 2 peppers of different colors.
  • A handful of cherry tomatoes.
  • 4 eggs.
  • 5 tbsp sunflower oil.
  • 130 grams of flour.
  • 500ml milk.
  • 150 grams of cheese.
  • 4 tablespoons Greek yogurt.
  • 1 tsp lemon juice.
  • 1/3 tsp mint.
  • Dill.
  • Parsely.
  • Salt.
  • Black ground pepper.

HOW TO MAKE IT??

  • In a pot add the water and let it boil. Then add the broccoli. and 2 tbsp of milk. Cook it for 2 minutes. Grease the baking pan with olive oil and add the broccoli.
  • In a pot add water and let it boil. Then add the cauliflower, salt and 2 tbsp of milk. Cook it for 4 minutes. Add the cooked cauliflower into the pan with broccoli.
  • Take a pan add the chopped onions. Fry for 3-4 minutes. Then add the chopped carrots and fry for 8-9 minutes. Add one cloves of garlic. cook for 5 minutes. Add the cooked mixture to the baking pan. 
  • Add the chopped peppers and chopped cheery tomatoes to the pan 
  • In a bowl crack 4 eggs. Whisk the eggs. add 5 tbsp oil and whisk again. Add flour and mix. Make sure the flour is well mixed. Add milk and mix. Add dill and parsley into the mixture
  • Pour the mixture into the pan. Sprinkle it with cheese. Bake for 40-45 minutes on 180° or according to your oven.
  • While its baking, grab a bowl add yogurt, 1 clove of garlic, lemon juice, mint, salt, black pepper and dill. Mix well 
  • Serve the casserole with homemade sauce we prepared. Enjoy!!
