What is Castella Cake?
Castella cake is a sponge cake baked in a water bath that is known for its fluffy texture and iconic jiggle. It is made with basic ingredients and the recipe is easy to follow
Ingredients:-
5 eggs
80ml milk
50ml cooking oil
Cake flour 80g
salt
75g sugar
Hot water
How to makee it???
Store the egg whites in a cool place. Then in a sauce pan add oil and milk and let it come to a boil. Then add it into a separate bowl and mix well. Then sift the cake flour. Mix well then add the egg yolk one by one. Mix well.
Beat the egg whites on high speed for 3-5 minutes then add sugar and continue mixing until soft peaks form. Make sure you don’t over whip, otherwise your cake might get cracked.
Gently fold in the egg yolk mixture. Pour the batter into the prepared pan and rap the pan a few times to get rid of large air pockets. Place the pan into a larger baking tray and add warm to hot water, not boiling, into the pan, up to halfway of the pan.
Place into the preheated oven on the second bottom rack, not middle and bake for 30 minutes and remove the pan from the baking tray.
