Castella Cake Recipe

Ingredients

  • 5 eggs
  • 80 ml milk
  • 50 ml oil
  • 80 g cake flour
  • 75 g sugar
  • pinch of salt
  • 1/2 tsp vanilla essence

Instructions

  • Store the egg whites in a cool place. Then in a sauce pan add oil and milk and let it come to a boil. Then add it into a separate bowl and mix well. Then sift the cake flour. Mix well then add the egg yolk one by one Add vanilla essence and Mix well.
  • Beat the egg whites on high speed for 3-5 minutes then add sugar and continue mixing until soft peaks form. Make sure you don’t over whip, otherwise your cake might get cracked.
  • Gently fold in the egg yolk mixture. Pour the batter into the prepared pan and rap the pan a few times to get rid of large air pockets. Place the pan into a larger baking tray and add warm to hot water, not boiling, into the pan, up to halfway of the pan.
  • Place into the preheated oven on the second bottom rack, not middle and bake for 30 minutes and remove the pan from the baking tray.
