In a bowl add eggs and sugar. Beat it on high speed for 3-5 minutes.
Add all the ingredients one by one and mix well until everything is well combined
Take a small pan, grease it with oil or butter then add the mixture. Cover it with a lid. cook on low-medium flame for 4-6 minutes. Then change the side and cook again for 4-6 minutes.
Top pancakes with a pat of butter and drizzle with maple syrup; serve immediately. Serve with any combination of confectioners’ sugar, whipped cream and berries, if desired.
