Vegetable casserole

This Vegetable Casserole is super creamy and easy to make!!!

Ingredients

  • 1 chopped broccoli.
  • 2 tbsp milk
  • 2 tbsp milk
  • 500 g chopped cauliflower
  • 1 chopped onion
  • 1 chopped carrot
  • 2 cloves garlic
  • 2 chopped peppers
  • A handful chopped cherry tomatoes.
  • 4 eggs
  • 5 tbsp oil
  • 130 g flour
  • 550 ml milk
  • 150 g cheese
  • 4 tbsp yogurt
  • 1 tsp lemon juice
  • 1/3 tsp mint
  • salt as per taste
  • black pepper as per taste
  • Parsley
  • Dill.

Instructions

  • In a pot add the water and let it boil. Then add the broccoli, salt and 2 tbsp of milk. Cook it for 2 minutes. Grease the baking pan with olive oil and add the broccoli.
  • In a pot add water and let it boil. Then add the cauliflower, salt and 2 tbsp of milk. Cook it for 4 minutes. Add the cooked cauliflower into the pan with broccoli.
  • Take a pan add the chopped onions. Fry for 3-4 minutes. Then add the chopped carrots and fry for 8-9 minutes. Add one cloves of garlic. cook for 5 minutes. Add the cooked mixture to the baking pan
  • Add the chopped peppers and chopped cheery tomatoes to the pan
  • In a bowl crack 4 eggs. Whisk the eggs. add 5 tbsp oil and whisk again. Add flour and mix. Make sure the flour is well mixed. Add milk and mix. Add dill and parsley into the mixture
  • Pour the mixture into the pan. Sprinkle it with cheese. Bake for 40-45 minutes on 180° or according to your oven.
  • While its baking, grab a bowl add yogurt, 1 clove of garlic, lemon juice, mint, salt, black pepper and dill. Mix well
  • Serve the casserole with homemade sauce we prepared. Enjoy!!
