Easy breakfast taco recipe

This breakfast taco is really easy to make. Its a vegan taco no meat used in this recipe. A quick grab n go breakfast recipe

WHAT DO U NEED FOR THIS RECIPE?

  • 2 tortillas.
  • 1 egg.
  • 120g cheese.
  • 3-4 cherry tomatoes.
  • Feta cheese.
  • Olives stuffed with lemon.
  • Basil.
  • Avocado.
  • 1 tbsp lemon juice.
  • Red pepper flakes.
  • Salt.
  • Ground black pepper.
  • Cucumber.
  • Chives.
  • Salt.
  • Canned Corn.

HOW TO MAKE IT?

  • Crack the eggs in a bowl and whisk. Moisten the tortilla with water. Add the tortilla into a frying pan and brush one side with egg. Cook for 3 minutes THEN change the side and brush it with egg. Cook again for 3 minutes.
  • Sprinkle cheese all over. In the center of the tortilla add chopped cherry tomatoes, feta cheese, olives and basil.
  • Now old the borders one by one beginning by the top, then the one in front and finally the two sides.. If your side doesn’t fold. Take a small bowl add one 1 tbsp flour and 1/2 tbsp of water and mix it then add to the edges and fold it. Turn the tortillas and cook it for 3-5 minutes
  • In a bowl add chopped avocado, lemon juice, salt, black pepper and red flakes> mix well and then add chopped cucumber, chopped chives. Sprinkle salt and mix. Add the corn and mix again.
  • Serve and enjoy!!
